Death By Chocolate


Let's say this week started rough yet got better really fast. I spent the weekend updating art, baking, and carrying on. You can see that in the last post.

But this last week (the first week of March) started off at work as usual and was a rough start. I just recently had a new group added to my desk and it has kicked my butt a little the first month.

So Mike and I, as usual, when we don't see each other for a weekend we text. So he's texting me like he normally does after he wakes up and we are chatting away. He then starts asking me questions like "how many miles are you running today?" Ok, fair enough - he knows I run pretty much daily now. So I reply back with 4, then he starts saying, you should do only 3, maybe only 2. Ok......

Then he proceeds to ask if I am taking an early lunch. No, same time. So I get a few of these types of questions about how my day is planned. What are my plans for tonight etc. Which isn't totally out of the ordinary just strange that they are all strung together within an hours time.

So I keep going along my day, coming up on lunch. I get a phone call as I am packing up to head out. It's Mike, ok well he does know I take lunch at 2 pm every day. No biggie.

So I say hey, how's it going and he says, "Good, come downstairs, bye." I get this bright look on my face, smile. Grab my things and race down the stairwell.

There he is sitting in the lobby. I didn't know he was coming. Then he had flowers for me too. Gorgeous flowers with lilies and sunflowers. Sunflowers are my favorite, I'm a Kansas girl for sure, and lilies are just so pretty especially in orange and yellow :)


He also brought me a can of Lysol because I had said that I needed Lysol to spray my office with since everyone around me seemed to be sick.


He definitely surprised me and I love him so much for the random act. Coming down to see me when I wasn't expecting it and then coming to my office with flowers and Lysol :) I'm keeping him.

So I had Mike with me till Wednesday morning where after our fun Monday and Tuesday filled with playing Mario Kart with my neighbor and getting Imo's pizza and him running 1 1/2 miles with me, he went home and I planned my co-workers birthday.

She's a dear lady that is so amazing so I wanted to make her an amazing treat. She also loves loves loves chocolate and booze. So I incorporated both. Epic brownies turned into "Death By Chocolate." Oh no? Oh yes!



The ingredients are simple, just a few extras you need, like chocolate pudding, caramel sauce, instant coffee, Kahlua  and whipped topping.



If the shear amount of chocolate wasn't enough, 24 oz plus 1/3 cup of cocoa, there are 6 eggs and 3 sticks of butter in these brownies.



You mix your dry ingredients then you mix your wet ingredients all separately then mix together. I must say at this point I'm thinking, what on earth am I doing to these people?!? Oh that's right, making them happy on a Friday :)


So I then pour this delicious looking batter into my 9x13 pan, it FILLS the pan. These are DEEP dish brownies. None of those wimpy boxed Betty Crocker brownies (there is a time and a place for boxed brownies, this is not one of them.) I found the death by chocolate idea but was turned off by the lack of creativity of the brownie/chocolate cake aspect. So That's where epic brownies came in.


Once the brownies were cooked and pulled out to cool for about 5 minutes, I dumped 1/2 a cup of Kahlua on them after I poked them to let it soak. OMG!!! I tested and was like, holy cow, we are partying tomorrow! Then I brought my heath bars out of the freezer - yes the freezer - promptly I started to slap them against my counter top to break them up. Three candy bars worth of crumble in that little bowl.

Once the brownies cooled and the whipped topping thawed and my two large boxes of pudding set up, mind you this took 6 cups of milk to create chocolate pudding. HOLY MOLY! Good thing I bought more while at the store. Total depletion of my 1/2 gallon.


Step 1: Cut up brownies into bites and layer on bottom of bowl.
Step 2: top with half chocolate pudding.
Step 3: Top with 1/3 of the heath bar (or skor bar)
Step 4: Top with half whipped topping


Step 5: Repeat
Step 6: Top with remaining candy bar pieces


I made a little one for my neighbor in a clear glass to show the layers.

I must say this is a terribly delicious and dangerous dessert. When I brought this to work it, 1. weighed a ton, 2. got lots of stares and walk away, and 3. made a lot of people hate me for the rest of the day.

One co-worker and I had this conversation:

CK: I'm going to stick my head in the bowl.
Me: Haha, let JC have one more go before you do then, then go ahead. I want to take very little home with me this weekend.
CK: Can't.type.coma.setting.in.heart.seizing.
Me: HAHAHA!
CK: I even took a small amount, just because I knew better. Still wanted to sleep before I was done. Pretty sure my kidneys just walked off stage.
Me: hence "DEATH" by chocolate
CK: I think I could jump of this building and fly right now. Or, I just lost 3 years of my life in the past 10 minutes. In other words, you forgot to tell me there was cocaine in that thing. I.just.ate.brown.cocaine.
Me: HA! Yeah that stuff will get ya. The fact that it has an exorbitant amount of chocolate, sugar, booze, and more. It's a killer dessert - made only now and then, like 1x a year, much like gooey butter cupcakes.
CK: For some reason I feel like I would have been healthier eating a stick of butter.
Me: Probably fewer calories actually, or at least less sugar. Or you could have eaten 6 eggs on their own.
CK: It's no fun without a little sugar. Gross. I once learned how to bombardier raw eggs.
Me: Ha! well dip it into sugar and I'm still sure it's better for you.

So yeah, that's about how all felt. Didn't quite get the same imagery from the boss or others as I did with CK but he is a writer.

So the long awaited recipe is here, I got the brownie from A Spicy Perspective and then blended a few Death By Chocolate recipes together from allrecipes.com 

Epic Brownies
Ingredients:
1 lb dark chocolate, chopped (or semi sweet chocolate chips) **I'm cheap**
3 sticks unsalted butter
13 oz can Dulce de leche (or 1 jar -13 oz- Smucker's caramel sauce) **I'm cheap and refused to pay $3.50 for Dulce de leche - sorry guys**
1 cup sugar
1 Tbsp vanilla
6 eggs
1 2/3 cups all purpose flour
1/3 cup unsweetened cocoa powder
2 1/2 tsp salt
1 Tbsp instant coffee granules (3 pkts of Starbucks Columbia Via)
1 cup chocolate chips
1 cup chopped nuts (optional or get creative with toffee bits, crushed Oreo's, butterscotch chips etc.)
1/2 cup Kahlua

Directions:
Preheat oven to 350 degrees F. Grease a 9x13 pan and set aside.

Melt the butter, 1 lb of chocolate, and caramel/Dulce de leche together in the microwave or double boiler. If melting in microwave, heat for 60 seconds  then stir. Repeat in 30 second increments until mixed. Allow to cool a little.

Mix flour, cocoa, salt, and coffee granules together in a separate bowl.

Whisk eggs, sugar, and vanilla into the chocolate mixture. Then slowly add the dry mixture while whisking until just combined.

Finally add the chocolate chips and chopped nuts or other chosen goodies. Stir well.

Pour the brownie batter into your prepared pan and bake for 35-45 minutes. DO NOT OVER BAKE. Check at 35 minutes with a toothpick. The moment the toothpick comes out mostly clean, remove from oven. The brownies will continue to cook a little as they are cooling, but you don't want them to be overcooked.

Allow brownies to cool for 5-10 minutes. Poke an even amount of holes all over the brownies with a fork. Then pour the Kahlua over the top and let cool completely.

Once cooled cut into bite size squares and set aside.

Death By Chocolate
Ingredients:
2 pkgs (the large ones that serve 8) chocolate pudding mix
6 cups milk
1 - 16 oz- pkg whipped topping
3 Heath or Skor chocolate covered toffee candy bars (frozen then smashed into bits)
1 recipe (above) Epic Brownies soaked with Kahlua

Take whipped topping out to thaw. Make chocolate pudding, place in fridge to set up. Bake epic brownies and cool completely.

Take a large bowl, or large trifle bowl.

Layer brownies evenly on bottom. Then top with 1/2 of the chocolate pudding. Top the pudding with 1/3 of the toffee candy, then top with 1/2 the whipped topping. Repeat brownies, pudding, candy, whipped topping and then top the last layer with the remaining candy. Place in the fridge for an hour or so to set up. **Mine sat all night. OMG!

WARNING: This is extremely rich and decadent and very very very dangerous. You have been warned.

This is the perfect dessert for a chocoholic. And by all means if you don't like a specific ingredient, be it coffee or the Kahlua take it out or substitute something for it. Whiskey, a dark beer. Get creative. These are EPIC brownies and therefore the ingredient list needs to stay EPIC.

Million Dollar Pound Cake

Well, 3 posts in a week and all three back to back, yes I know. We are going a little nuts making up for the things we have made and not posted.

Between holidays, which are thankfully over, and now with just being busy with work and more it's been a little challenging to get to posting. We will try to do better. I also can't say I have been baking much let alone has Mike or I been cooking a lot of anything that has been blog worthy. Mostly average food that isn't worth talking about (spaghetti, breakfast for dinner, etc). Just haven't had a lot of new recipes or recipes we have created.

So, now that we are back into the normal swing of things I have gotten my baking bug back. So, the other night I was bored....really bored. I am still on the quest for Mighty Melt bread but have yet to replicated it. So I've been making bread in my bread machine rather than buying a loaf since my local Wonder Bread outlet went out of business with Hostess.

But this is not about bread, not at all. This is about cake. Delicious, moist, and densely delicious cake. There is a reason this recipe is called "Million Dollar Pound Cake." One reason is probably because it require 6 eggs and a full pound of butter. If you notice a lot of pound cake recipes don't actually require a pound of butter anymore.

Much like the loaf pound cake I made after the million dollar pound cake. That one only requires 1 stick of butter (1/4 pound). So maybe it's just the size of the loaf or cake you are making, I suppose. I did make that too, that is what these delicious dense muffins are. That is the basic Pound Cake Loaf which I chose to turn into muffins for ease of eating. Most cakes make great muffins.

This particular recipe required unsweetened applesauce but I only had apple butter. So this cupcake had a stronger flavor of spices (cinnamon and cloves).

In any event, this cake is by far the kind you want to bake when going to a nice dinner party or when the in-laws are coming over.

This is not created in a loaf style either. This is baked in a tube pan (or bundt if you feel like being fancy, like I did below). I have this awesome tube pan that is also spring form. It's a spring form but can be turned into a tube pan that looks like a bundt. It was amazing. I also have a standard angel food pan which I used last time I made this cake.

Million Dollar Pound Cake
I halved the recipe earlier this week because I didn't want to use a pound of butter (all the butter I had) nor did I feel like wiping out half of my eggs on hand. I also have neglected to replace my almond extract so I ended up using rum extract in it's place which has also now run out. I don't care for buying extracts due to the price, but that's what happens when you love baking.

So here you go.

Million-Dollar Pound Cake
Prep: 20 min      Bake: 1 hour 40 min

2 cups (4 sticks - 1 lb) butter, soft
3 cups sugar
6 eggs
4 cups all purpose flour
3/4 cup milk
1 tsp almond extract
1 tsp vanilla extract

In a large mixing bowl, cream butter until fluffy. Gradually add sugar, beating until light and fluffy, about 5 minutes. Add eggs, one at a time, beating well after each addition.

Add flour to creamed mixture alternately with milk, beginning and ending with the flour, just until blended. Stir in extracts. Pour into a greased and floured 10-in tube pan.

Bake at 325 degrees (F) for 1 hour and 40 minutes or until a toothpick inserted near the center comes out clean. Cool for 15 minutes before removing from pan to a wire rack to cool completely.

Dust with powdered sugar or drizzle with chocolate syrup for an added touch.

Makes 16 servings.

I will warn you, this has 497 calories per slice ;) Just make sure you're ok with that.

Pound Cake Loaf (a lighter option)
Prep: 15 min     Bake: 45 min + cooling

1/2 cup butter, soft
3/4 cup sugar
3 eggs
1/4 cup unsweetened applesauce (or apple butter if you want more of a spiced cake)
1 1/4 tsp vanilla extract
1/2 tsp grated lemon peel (or a squirt or two of lemon juice as I did)
1 1/4 cups all purpose flour
1/2 tsp baking powder
1/4 tsp salt

Directions
In a small mixing bowl, cream butter, and sugar until light and fluffy, about 5 minutes. Add eggs, one at a time, beating well after each addition. Stir in the applesauce, vanilla, and lemon peel. Combine the flour, baking powder, and salt; add to creamed mixture just until blended.

Transfer to an 8-in. x 4-in. x 2-in. loaf pan (or put into cupcake liners in cupcake tin) coated with cooking spray. Bake at 350 degrees (F) for 45-55 minutes or until golden brown and a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

Makes 12 servings

Now these only have around 185 calories.

Now go out and bake something extravagant.

Oatmeal and Oat Obsession

Ok, so I have had this oats obsession this week. Absolutely been OBSESSED. Much like Julie was with Julia in "Julie & Julia." One of my favorite movies by the way.

So, to move forward - what did I do with my oat obsession? Well I made oatmeal, naturally. Crock Pot oatmeal no less. I could have made cookies, oat bars, etc. But I settled for something healthier and delicious to boot and would be ready for me to eat as I shuffled through the kitchen at O'dark thirty in the morning. Now that I do not NEED to exercise in the mornings before work I give myself the benefit of eating in bed in the wee hours followed by drifting back to sleep before my second alarm sounds or, depending on the day, I will talk to Mike while he is finishing his last hour of work. Which I do enjoy my morning phone calls with him :) Start the day right.

So first we will start off with a dangerous oatmeal that I found the recipe for and thought would be a good idea to make for Mike and myself last weekend. Well, anything that is buttered and bruleed is probably not a good idea to eat when trying to be healthy. Hmm, noted and I should know better. So we have "Oatmeal Brulee with Brown Buttered Pears and Cinnamon Ginger Cream." Sounds delicious, no? Well it was quite delicious, however, dangerous in the calorie department. AFTER eating it I plugged all ingredients into my phone and discovered that it had a whopping 605 calories!!!! Holy butter balls Batman!!! Yeah, not making that again, even though it was quite yummy - minus the burnt bits of pear - oops, my bad honey! ;)

Lovely, yes, delicious, yes. Healthy - far from it. Granted, anything with cream, butter and sugar is going to be not so great for you. I told Mike the calories and even he was shocked. So having to put up with my desire to make oatmeal for us for breakfast he soon was rewarded with a toy.

 


A layout boat for duck season, of course we finally get it to where it's going to be stored and it has to be tested. Rightfully so - Mike gets out to the middle of this pond and starts saying "take a picture! take a picture!" Hehe, like a kid in a candy store. He's a happy man, so this lady is happy too.

So after our layout boat adventure and our lesson learned from bruleed and sugared oats the weekend ended and I headed back home to work :(

So this week I have made two different types of crock pot oats. Pumpkin pie oats and banana oats. I found the recipes at Sugar Free Mom's site. These are SUPER easy to make and just add your desired amount of sugar once everything is cooked. That way everyone can add what they like instead of having one taste for all. I added honey or stevia to mine. Brown sugar to the pumpkin pie oats though. Yum yum yum.

These are quite filling and quite low in calories. Even though Sugar Free Mom says not to use old fashioned oats, I did. I don't like spending more on something if I don't have to so I stick to my old fashioned oats and save a buck. I came up with 195 calories per 1/4 recipe of the Pumpkin Pie type and 125 calories for 1/4 of the banana oatmeal.

The basic recipe is:
1 cup oats, old fashioned in my case
3 cups water
1/4 tsp salt

Cook on low for 8 hours.

For banana oatmeal: add 1 banana, 1 tbsp butter, 1 tsp vanilla extract, & 1/2 tsp ground cinnamon.
For pumpkin pie oatmeal: add 1 cup canned pumpkin puree *not pie filling*, 1 tsp vanilla extract, and 2 tsp pumpkin pie spice.

Obviously you can customize this oatmeal however you feel compelled to. I've thought about apple spice, cinnamon sugar, peaches and cream, or just about any combination you could possibly find in the store you could easily make overnight in your crock pot for a better price and better quality and known ingredients. Sounds good to me.

I have eaten these for the past 3 days and it's probably a great way to start my day since I have entered month two of insanity. Monday afternoon I was scheduled to do the Fit Test as well as Max Cardio Conditioning Circuit thingy - well to say the least I cursed, griped, hated, loathed, and told Shaun T. where he could go and how to get there while doing this set of workouts. I then looked at my hat on Tuesday when I did Max Plyo and went for a 2.5 mile run PRIOR to Insanity. This is what my hat looked like.


Can we say DRENCHED? Yes, drenched. I sweat a lot during insanity to begin with and this is why it is recommended to have a towel handy while doing these workouts  - but my goodness gracious. I probably would not have noticed had I just taken the hat off and tossed it to the side but I went in the bathroom and looked up in the mirror and saw this. WHOA!!! Time to hydrate for sure! Mike is doing the Insanity program as well and is a week behind me. He's in for a treat next week. Though I truly believe  month two is where the big changes start to happen. Believe me, I've been cursing Shaun for a week now in month two but I know things are changing. Anyway, enough of about this, I'm not getting paid to endorse a program - hmmmmm ha ha, just kidding. I won't do that to y'all, this is about food right?

Peanut Butter and Bananas - and oats, and cinnamon, and sugar

Ok, so quite obviously I'm a bit banana obsessed and this time it involves peanut butter. Which, is one of my all time favorite combos and foods. I love to eat peanut butter and banana sandwiches with a little honey drizzled on them. Mmmmmmm, yum. I know what's for dinner tonight :)

So, what we have here now is a brainstorm of an idea for me to not have to make breakfast in the morning and now that I have time to relax in the AM instead of pop out of bed like a Pop Tart and begin my day with insane amounts of exercise I just want something I can grab and crawl back in bed while watching the news sleepily or talk on the phone with Mike, should he be at work that morning.

I searched the web, and for some reason I was thinking about oat bars, or oatmeal bars. That got me thinking that I wanted something healthy, simple and easy. Nothing pre-packaged but still not so complex it would take me a week to gather ingredients. I finally landed on Gingerbread Bagels blog thanks to Google.

I found her fabulously easy, simple and so very delicious recipe for Peanut Butter Banana Oat Squares, which she says to have gotten from Pinterest. Why I didn't see these I have no idea, since I have this multitude of things I want to try on my Pinterest.

Anyway, so I looked through the ingredients, checking them off as I went to make sure I had them and I did. Hooray for not having to go to the store! So I began, at 10pm. That seems to be normal for me, late night baking. But as they say----


Being proud of myself for buying rolled oats from Whole Foods and only spending $2 for this giant amount I decided that despite what the recipe called for (quick oats) I would use mine instead and hope for the best. As you can clearly see the brown sugar jar is empty, after using it up for these puppies.


I was pleasantly surprised at how easy and simple this recipe was, I decided to add a protein boost to mine by using some of the whey protein powder I had on hand. I used Naturade with 80 calories per 2 scoops, but you are welcome to use whatever you like, chocolate flavor may even taste good if you want something different.


I of course have now made this recipe twice since Tuesday and love love love it. This second batch I didn't add protein powder due to running out. Guess I should go pick up some more.

and yes I have Hippo salt and pepper shakers

So here is the super simple recipe and the calories for the non protein version:

Peanut Butter Banana Oat Squares:

Ingredients:
1 1/2 cups quick oats (I used rolled, they work fine)
1/4 cup packed light brown sugar (didn't pack mine and it tasted great)
1 tsp baking powder
1/2 tsp Kosher salt (I used iodized table salt)
1 tsp ground cinnamon
1 tsp vanilla extract (I used imitation no alcohol kind)
1/2 cup milk (I used skim)
1 large egg, beaten lightly
1 large banana, mashed (obviously I found an EXTRA large banana)
1/4 cup creamy peanut butter (I used 365 (Whole Foods) Creamy PB as that is my current favorite)

Instructions:
Mix together the quick cooking oats, light brown sugar, baking powder, salt, and ground cinnamon.

Ad in the vanilla extract, milk, and egg. Mix the ingredients together.

Add in the mashed banana and peanut butter. Combine all ingredients well.

Pour mixture into a lightly greased 8x8 inch metal baking pan (or an 8-inch round cake pan, or a loaf pan). Bake at 350 F degrees for 20 minutes, or until center is no longer gooey.

Cut into square, triangle or slices and enjoy! (I topped mine with butter - YUM)


Now go out and cook!
