Cookie Experiment & Apple Kuchen & Casserole

So this is your two-fer post. I'm, 1. too tired to make it two posts and 2. It's late.

So this last few weekends, I guess from the week before Easter to this weekend has been full and busy with back and forth and family gatherings.

Honestly some of the end of March is a blurr. I have some photos to remind me of what I purchased that week but not much else haha. I guess the running is using my brain power now and taking over.

I did buy grapes not long ago but found that these grapes were hulk sized.


That is an average sized spoon. Can you say HUGE. That was the word of the day one day the week after St. Patrick's but before Easter. I bought these Hulk grapes and then at work saw two HUGE vultures just chilling out on top of the office building I work in. Came back from lunch and was just standing in the parking lot staring with mouth agape and saying, oh my goodness those are HUGE birds! I'm serious, when they look big from the ground floor of a 5 story building you know they are big birds.

So then I got bored one night and decided it was time to experiment. I kept seeing people online using Easter candy to create new and fun treats. So, since I lacked candy I had to go buy some. So I went and purchased the candy I know Mike likes and decided to play with my mom's chocolate chip cookie recipe.


So I took my mom's basic chocolate chip cookie recipe is actually pretty close to the Toll House recipe with a few tweaks in measurements. Crazy huh? I think everybody's chocolate chip cookie recipes are based on the Toll House recipe but then tweaked for preference.


So I made the basic recipe, then I added about 1/4 cup to 1/3 cup creamy natural peanut butter. Then I added chopped up Peanut Butter Squared Snickers. So delicious on their own and then to add it to a cookie. Then I baked according to directions.

After I took some powdered sugar, butter (room temperature), a package of Swiss Miss dark chocolate cocoa, and a little vanilla and made a frosting. Then when the cookies cooled, (they were still soft and had a great chewy caramel bend to them, I frosted them with the chocolate frosting. Mike said the frosting texture wasn't quite right. A little grainy, yes. But that could have been solved by melting in a little milk before adding, then I would not have had to add any milk.

Basic frosting recipe is as follows: (I use for cookies and cakes)
1 stick soft, room temperature butter/margarine
1 tsp - 2 tsp vanilla (or desired flavoring)
8 - 16 oz powdered sugar (depends on how much frosting you want
1-3 Tbsp milk (depends on consistency you are going for - cookie or cake or a glaze)

Mix all together in mixer and frost as needed.


So after making the cookies and sharing with Mike I decided to make something else, I think my baking bug is finally coming back. I got burned out there for a while. So I decided I needed to use the apples Dad had given me that were taking up a good portion of space in my freezer. So I pulled those out and thought about what I could make.


I had been eyeballing my great grandmother's apple kuchen recipe for a while but just didn't take the time to do it. It's definitely not a 10 minute project. More like 2 1/2 hours total. Definitely something to plan to do. I'm sure you can make the dough the night before and place in the fridge after proofing to save and then bake the next morning for breakfast. I think of this as one of those special breakfasts or for dessert. It's delicious and has some family history with it.

First you have to make the dough, with flour, yeast, sugar, butter, water, egg, cinnamon, and salt. Then once it's put together, you knead it out into a nice ball and let it rest.

After you let the dough ball rise you have to punch it down in the center and let rise again. Mind you, rise times are 1 hour for the first and around 30 min to 1 hour for the second.


















Once dough has risen twice and is nice and puffy you have to spread it out into a pan, the recipe says to divide into two pieces and then add toppings and bake. I chose to leave it in one and spread the dough out in a 9 1/2 by 11 inch cookie sheet.


Then you add your toppings, in my case - apples with a little flour, sugar, and cinnamon tossed together for a delicious flavor combo. Recipe says to arrange neatly. I did my best but would have preferred to have very thinly sliced apples but I made due with what I had.


So then you bake for about an hour and then it looks a little like this. Once cooled top with either powdered sugar dusted all over or make a thin glaze and drizzle. I chose to glaze it.

Hulda Bader's Kuchen Recipe:

Dough:
5-6 cups flour
2 pkg active dry yeast
1/2 cup sugar
1 1/2 tsp salt
1/2 cup softened butter
1 1/2 cups hot tap water (120 F - 130 F)
2 eggs
1 tsp cinnamon
Salad oil/vegetable oil (I used Pam spray)

Directions:
Combine 2 cups flour, cinnamon, sugar, and salt in a large bowl. Add softened butter. Add water into bowl all at once. Beat with mixer at medium speed for 2 minutes. Add eggs and 1 cup flour. Beat at high speed 1 minute. Gradually stir in just enough flour with wooden spoon to make soft dough that leaves the sides of the bowl. Then onto floured board round into a ball. Knead 5-10 minutes until smooth and elastic. Brush with tiny amount of oil. Cover with Saran Wrap then a towel. Let rise on board. After 1 hour, push down in center. Leave to rise again (about another 30 min to an hour). Divide and shape. Place on greased bakery sheet. Brush with melted butter, let rise again. (30 min to an hour). Bake at 350 F degrees for 30 min.

Toppings:
Fruit Kuchen: roll out dough, brush with melted butter and add fruit toppings.

Apple Kuchen: slice apples thin. Mix them with cinnamon and sugar, and a little flour. Arrange neatly on dough. Sprinkle again with cinnamon and sugar where needed.

Rolled Kuchen: Roll out dough, brush with melted butter. Chop desired amount of nuts, raisins, cinnamon, and sugar. Roll up into log. Place on bakery sheet and brush with butter.

After cooled, drizzle with icing, top with cherries and walnuts.

So I took this to work with me the next day and it was an instant hit with all the coffee drinkers. People ask for the recipe, I send them here. ;) Easier than sending out 100 emails of the recipe that I never bring to work with me.

So then we hit Easter. Mike wanted me to make Rockin' Guac, a recipe sponsored by rotel. I was cool with that since I know my family will eat just about anything and this would be good to munch on before the ham and German potato salad would be ready.


It's a super simple recipe.

1/2 cup chopped onion (red)
3 avocados, ripe
1 can rotel, mild or original
salt and pepper to taste

Instructions: Mash all together.

Mike says it should be a 2 avocado to 1 can ratio, where I think maybe using mild rotel and adding a tomato might help. Definitely had to add more salt and pepper. I tend to under season with salt just to be on the safe side. Something totally fixable.


But it was a hit, mom enjoyed as did Mike and myself. Not sure if I saw dad take a dip at it or not. I only went home with a heaping half cup. So I think this was a good one. A little chunky but good.

Mom made a delicious dinner of honey glazed spiral cut ham, German potato salad, some olives and pickles as a part of the dinner (much like what we do for Thanksgiving). Then I brought the vegetable. Carrot casserole. Mike enjoys this so much he even eats seconds. It's tasty and you WILL want seconds. Of course this batch came out a bit lumpy, I think it's because I used baby carrots instead of whole carrots chopped up. Boiling baby carrots to a tender mush takes FOR-EV-ER! Do not do it unless you have a food processor. Which is what I want for Christmas or my birthday, you hear that family? I WANT A FOOD PROCESSOR, at least 5 cups capacity and not a proctor silex brand. Preferably Black and Decker or kitchen aid. Yes, this is what I have been asking for every year for about 3 years now. Why can't they seem to remember?

Oh well...guess I'll just have to buy it myself.

Easter went well, normal family gathering. Food, chatter, Easter basket hunt, Nerf shootout.

Speaking of Nerf shootout, which Mike and I did in the living room of my folks house and had a great time and had many laughs from everyone, I went to go practice for trap the day before Easter. Took a friend to come watch, he had a good time and was fascinated with it.


Wish me luck on May 11, that is when the corporate challenge trap shooting competition is. I am in it as the female shooter for my company. So nervous. I average between 15 and 18 per round out of 25. I would love to get closer to 20 but I need to practice more. Ammunition is not cheap, however.

So now we come to this last weekend, we finally made it to our favorite local bar and checked out the updates they had done, new floor, new seating, new TVs, and new menu. We had the pepper jack bites, which they kept from the old menu, and then Mike had the Saint's Burger (signature burger with bacon, cheese, and lettuce and tomato and onion and a Jack Daniels sauce. Looked amazing. I had a grilled chicken bowl. It had grilled chicken, shredded jack cheese, corn, mashed potato and gravy. It was quite delicious. We hit it up on the right night too since it was $2 anything behind the bar. We each had a drink with our dinner and called it a night.

Now we come to this weekend. Last night was the travel time to Mike's and today we slept in and kind of bummed around. A rest day. Then I made dinner. A Mac & Cheese Chicken Veggie Casserole. It was ok, not fabulous but edible and tasty.

It needed more flavor pop, chicken needed salt and pepper and the cheese needed to be more spread out through the pasta. But all in all, something we can improve upon to have as a quick and easy family dinner staple.

The recipe is simple and comes from Country Crock.

Easy Mac & Cheese Veggie Chicken Casserole:
Ingredients-
4 Tbsp country crock spread, melted, divided
1 cup 2% milk (used 1%)
8 oz dry rotini pasta, cooked and drained
2 cups diced COOKED chicken breast
4 cups assorted frozen vegetables, thawed (used California mix)
2 1/4 cup finely shredded low fat cheddar cheese
1/4 cup plain dry bread crumbs
1 Tbsp grated Parmesan cheese

Directions-
Preheat oven to 400 F degrees.

If using raw chicken, season with salt and pepper and cook until 80% done. Then dice.

Cook past according to package directions, about 7 min in boiling water.

Combine 3 Tbsp Country Crock spread, milk, cooked rotini, cooked chicken, thawed vegetables and cheddar cheese in a large bowl and spread into an 8 inch baking dish/casserole dish.

Combine bread crumbs, Parmesan cheese, and remaining margarine in a small bowl; sprinkle over top of casserole.

Bake until heated through and crumbs are toasted. About 30 minutes.

Makes 6 servings.


Like I said, it needs more flavor. Seasoning. Maybe more salt and pepper and some garlic powder. Something to round it out and give it some depth. Not bad though.

Tomorrow is turkey scouting day, will also be a RushFit day and maybe a good 1 - 2 mile run. Shall see I suppose.

So what is in store for the upcoming weekends? Well, Mike will be turkey hunting, so hopefully we will have some upcoming wild turkey recipes for you. Also, I will be in the Color Me Rad race for KC next weekend and then April 27 I will be in the Warrior Dash 5k. In May I have trap on the 11th and then on the 12th I have a 5k walk with my mom for Mother's Day. So the upcoming months are busy and packed full of fun, adventure, and mystery *as usual right ;) *

Xtra Large Cookies and Valentine's Day

Yes, we are a little late here with our Valentine's day post. Of course neither Mike nor I are huge V-Day people. No reason to not love each other 364 days and only celebrate it only on 1 day out of the year.

I bought Mike a movie he likes, "Looper," and he bought me a cup from his Alma mater. I really like it and it's perfect for work.

So then I made cookies, Mike and I couldn't spend Valentine's day together, so we celebrated the weekend before. So the week of V-Day I made cookies, which I intended to take to work, but then I decided that I was gonna have a shark week kind of week and eat them myself over the course of a week.


Mind you, these are LARGE cookies, EXTRA LARGE cookies. Basically this is a one cookie recipe. Of course, if you wanted to make a tiny batch of cookies out of this I am quite sure you could, however, it's more fun to make these HUGE cookies and share them eat them all by yourself and not give any to your significant other. Sorry Mike, I love you :)


The ingredient lists for any of these cookies is rather simple. Basically it's a cookie recipe, depending on the type, and sized down to make one large cookie, or about 4-6 normal size cookies. But why make things small right? Bigger is better. Or at least when it comes to cookies and trucks.


















I found these recipes at the darling "Sally's Baking Addiction" blog. I saw Reese's Peanut Butter Extra large cookie. I was definitely making that. If I had to eat one food for the rest of my life, it would be peanut butter.

To top the recipe off, it has Reese's pieces AND chocolate chips AND peanut butter. Uh DONE, yum. Gotta have.


So you start out mixing your wet ingredients, butter and sugars and peanut butter. Cream those and then start adding your egg,  salt, baking soda, vanilla, and then flour. Once you have that mixed fold in your chocolate chips and Reese's.


You should then have this lovely, thick cookie dough. YUM! I could quite honestly eat this by itself. Of course between Mike and I we could put away cookie dough by itself.


You then have this lovely delicious, moist and yet crunchy cookie. This is literally the size of my entire hand. It's MASSIVE! And I totally ate this by myself, over a couple of days. 



Of course from this recipe comes XXL Death by Chocolate cookie (perfect for that shark week craving).

Also can make a Buttery Soft Sugar Cookie, which quite honestly I didn't care for on it's own, so I cut it out with a heart cookie cutter and frosted it and then wrote "XO" in honor of V-Day. Of course I noticed that I actually had red food coloring AFTER I made the frosting blue and then purple.



Of course with sugar cookies come snicker doodles. Which rolling this dough in cinnamon sugar is impossible. I also think my sugar and snicker doodle dough's weren't thick enough. I may have to try adding at least 1 - 2 Tbsp more flour to help with that.


 So, I"m sure you're wanting the recipes now. Well I will give you the Reese's Giant cookie recipe, the rest you can find sugar here and snicker doodle  here and death by chocolate here.

The XXL Death By Chocolate and the Giant Reese's Peanut Butter Cookie's are my favorites.

1 Giant Reese's Peanut Butter Cookie

Makes one (1) GIANT cookie

2 Tbsp unsalted butter, softened
2 Tbsp granulated sugar
2 Tbsp packed brown sugar
2 Tbsp beaten egg (crack and egg and beat it, use 2 Tbsp - or use egg beaters)
1/2 tsp vanilla extract
2 Tbsp creamy peanut butter (I used Walmart's Natural creamy)
1/2 cup all purpose flour
1/4 tsp baking soda
1/4 tsp salt
1/4 cup Reese's Pieces
1/4 cup semi-sweet chocolate chips

Preheat oven to 350 degrees (F). Spray baking sheet with nonstick spray or line with a silicone baking mat. Set aside.

In a large mixing bowl, whisk the butter and sugars until light and fluffy. Add egg and vanilla, mixing until well combined. Stir in peanut butter, then add flour, baking soda, and salt. Fold in Reese's Pieces and chocolate chips until combined. With a large spoon, scoop into a ball onto prepared baking sheet. The dough will be sticky. Make sure the cookie dough ball is tall and round. You can top with a few extra Reese's Pieces before baking.

Bake for 17-19 minutes, until edges are lightly browned. The center may appear undone, but it will set as the cookie cools. Let cool ON the baking sheet for 10 minutes. Enjoy.

Of course using this base you can always change it to match what you're craving. Use your imagination and taste buds to figure out what flavor combinations would work.

National Cookie Day Celebration - with Peanut Butter of Course

Well, duh, if you're gonna celebrate National Cookie Day you have to have peanut butter. But I did not make just plain old boring peanut butter cookies. I made "fancy" peanut butter cookies.

Thing is I love peanut butter, if you haven't figured this out yet. I mean, LOVE peanut butter. Mike tells me I eat it too much and I'll go through a jar a week if I'm not careful. Seriously I love it that much. I've been trying to buy better for you PB that doesn't contain added sugars or hydrogenated oils. I don't do a lot of health food but when I do, I pick and choose carefully. This means I decide upon foods that I truly enjoy and deserve higher quality - some things just need to be held to a higher standard.

So the peanut butter I used today DOES have added sugar, cane juice and molasses - I wasn't terribly thrilled but I was at Walmart and was limited - I can't say I care for the Smucker's natural peanut butter. That has a taste that is, to me, off putting and burnt. It is fine to use in recipes but I can't say it makes the best sandwich or spoon-able snack.

I also did not desire to go to two stores after work, so I was stuck with Walmart's pathetic and commercial selection of nut butters. Next time I'm definitely making the trip to Whole Foods. It is worth the time and effort to get a higher quality nut butter.

I digress. The peanut butter I purchased is called "Naturally More." I have had the almond version of this when I was at Costco.Delicious! The peanut version is about the same, this is 80% peanuts with an ingredient list of the following (more ingredients than I care for - typically I want to see only two, perhaps three dependent upon brand): Roasted Peanuts, Soy Protein, Flax Seed, Evaporated Cane Syrup, Salt, and Molasses.

The problem I have is with the soy protein and the cane syrup - pick molasses or cane syrup - you don't need both - and what is the purpose of the soy protein? Makes the protein content go up, yes but necessary? No.

For me there is no reason for sugar in peanut butter - but I prefer it that way. I say salt and peanuts is all you need - peanuts have plenty of oil on their own. Anyway..TO THE RECIPEEEE, CHARGE! *tosses on warrior dash hat - has horns mind you - and rushes to the kitchen for the recipe, arm out and proud like a Roman soldier* (Yes that just happened - things are weird when I'm by myself sometimes.)

I've wearied you enough with my nutritional rant.

So, I made these cookies, modified my mothers recipe ever so slightly to achieve the desired result. I've been toying with this recipe a little each time to find out the best way to make these and when they taste their best.

 To start with what I have altered from my mothers original recipe is to use natural peanut butter rather than a commercial brand. I prefer Whole Foods brand, has the perfect balance I think. Of course I have used others like Maranatha. Second I use all butter instead of shortening. I just like the flavor better. I also feel they tend to give the cookies a chewier consistency - my type of cookie (crunchy edges with soft centers).

And lastly, I like to dust with powdered sugar when they cool (obviously the below cookies have not made it that far).

So here is my mother's fabulous PB cookie recipe (by the way, this makes a lot of cookies, so halve the recipe if you don't plan to feed a classroom of small children or the office).

Peanut Butter Cookies
1 cup shortening (butter in my case), room temperature
1 cup white sugar
1 cup brown sugar
1 cup peanut butter
2 eggs
1 tsp vanilla extract
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 cups flour (I used bread flour this time, will see how that goes over - they taste fine to me)
1/2 cup peanuts (optional)

Preheat oven to 350 degrees

Cream butter/shortening, peanut butter, and sugars. Beat in eggs. Add dry ingredients. Mix well. Place small amounts of dough on an ungreased baking sheet. Flatten cookies with a fork dipped in sugar.

Bake for 10-12 minutes, dependent upon your oven. **I have a gas oven and had to go with 9 1/2 minutes**

Go crazy, modify and change the peanut butter to almond butter or Nutella. Add chocolate chips or butterscotch chips. Use your imagination. That's the great thing about cookies. Once you have a great base you can play around a little and make it into something completely different or more amazing than what you started with. This is how greatness happens. How do you think our Gooey Butter Cupcakes came into existence? Exactly!

November Foodie Pen Pal Reveal

It's that time again, time to reveal the foodie pen pal stash of the month. YAY!

My pen pal this month was Robin Lourie - she sent me this fabulous box. You can check out what she got from her pen pal here. I sent to Anna, who doesn't have a blog but sent me this e-mail in regards to the goodies we sent her.

I hope you are doing well this day before Thanksgiving! I wanted to send you a BIG thank you for the great box of goodies!
I truly appreciate the thoughtfulness that you put into creating this package. The almonds were YUMMY!
The dark chocolate bars will be consumed post Thanksgiving! I can't wait to try the recipes you sent as well. The can of pumpkin is exactly what I needed!
The barbeque sauce looks so pretty! I think that will go great on tempeh for a vegan tempeh reuben.

So now on to what we got :) I must say that Robin was lovely and sent the most wonderful things.


Look at this haul! I mean seriously! Of course this arrived the day I was heading out to go to Mike's, the mailman freaked me out by knocking on my front door (mind you I consider my actual front door the back door so, this really does worry me when I hear a knock at that door). Come to find the mailman waiting there for me and handed me this loveliness which I immediately became quite excited about and began smiling. I don't think she quite knew what to do with me other than walk away from me.



First thing I busted open, even before Mike got to see it were these bad boys. Soo freaking delicious, they were gone in 3 days (would have been sooner had I not had will power or the need to share at least one pretzel with Mike). I will be recreating these for a Christmas treat to pass out, rather than bake a bazillion cookies like I normally do. Going easy this season with the baking.



Then we have enchilada sauce and smoky pulled pork seasoning sauce. Um, delish!!! Mike and I had to make pulled pork for sure. So bought a pork shoulder (couldn't find one unseasoned at Walmart so I bought a BBQ seasoned and slow cooker ready one). This is the result ----



Yes, it's as delicious as it looks, super simple too. Add 1 cup of water to the packet of sauce and one 2-lb pork shoulder and cook on low for 8 hours. Easy peasy and super delicious with some baked potatoes and green beans. Yummmm :) I still have leftovers hehe.



Then we have tea, Tazo Passion, Nature's Splash (a lot like Crystal Light) and then some green tea. I adore the Tazo passion tea - when I worked at Starbucks that was my go to drink. I haven't tried the green teas yet and have brought the Nature's Splash to work with me for my water - I use Crystal Light daily so this is perfect.



And at this rate I will never have to buy peanut butter again, I just have to ask that they include peanut butter in every FPP box I get haha!! I do love peanut butter A LOT. It's got to be my favorite food. I was also getting low on honey and this was a pleasant surprise. I prefer local honeys and this is just perfect. Actually used it for the first time last night in some oat bars.


And now for the adult side. She must have read that I like to make beer bread. :) So I received two cans of this Bombshell Blonde Ale. I drank one, was not overwhelmed or in love with the flavor, it's beer. But it made some fabulous beer bread, which I made the other night and have been enjoying since.

October 2012 Foodie Pen Pal Reveal

It's foodie pen pal reveal day!!! HOORAY!!!!! Got my box Monday and was sooo excited about it. I had been waiting and hoping just crazy excited. It's just nice to get a package in the mail now and then that is specifically for you and has delicious treats in it. So this is my trick-or-treat FPP box.


When this loveliness arrived after my run I immediately took it home and ripped open the box - ok I didn't RIP open the box, just cut the tape. I pulled out the pretty orange card with a description of what was inside - all local Washington state items and homemade goodies. Libby - my pen pal for October also collects salt and pepper shakers so she shared some with me.


Firstly we have apple butter - OMG! I had just had some after Rugged Maniac at Cracker Barrel and was thinking to myself "Sarah, you need to go buy some." Well now I don't have to. This is delicious and I could totally eat it by itself but I'm restraining myself and using only a little at a time on bread items or oatmeal.


Yes, ran a 5k mud run Saturday Oct 27. In the 35 degree weather in Missouri. Brr but fun. Back to the food!


Then there was this loveliness. Apple Cider Syrup - OMG now I just HAVE to make some pancakes, maybe some cinnamon pancakes with apple slices and then this syrup or cook down the apple slices IN the syrup. Ooooo so many options. I could drink this, tastes like cider.


An then there is applesauce, I adore applesauce. I don't buy it enough that's for sure and with apple season I should really just make some. This was cinnamon-y but not over the top and had a nice apple flavor but wasn't tart like some get - you know to the point you pucker. No this was perfectly balanced. And I loved it so much it was finished off in 2 days. I told myself I would share these things with Mike but I just couldn't help myself and he told me to just enjoy. So I did.


Totally snarfed it up all by myself. Hehe. Sorry honey. Love you!


Libby also sent over mulling spices for hot cider or tea or whatever your imagination can think up for this. I will probably go buy some apple juice and make some cider. This smells amazing! I may just hang one of those little baggies in my car window and have my car smelling so deliciously Fall. Mmmm, nothing beats that cider smell. Well, except for maybe a handsome man all clean and showered up and dressed up ready to go out for a night on the town. (Yes you Mike).

There was also Rhubarb Rosemary Jam. Wasn't sure about this. I like rhubarb. I like rosemary. Hmmmm, so I tried it. Smelled a lot of rosemary upon cracking that jar open. Was unsure but I live by "try everything once." I actually enjoyed this. Would be good on wheat toast or something simple. You wouldn't want to put it on something too crazy. Would work with savory or sweet dishes. Maybe could turn it into a glaze for pork chops. Oh the creative juices are flowing today hehe. 


I can't recall if I said that I liked peanut butter or not. Libby had asked what our favorite fall flavor was, we said apples/apple cinnamon. So that is why we have all the apple stuff. But then, yes then, there was this loveliness of peanut butter goodness that was honey roasted. OMG I am in love with peanut butter (as far as foods go). It's gotta be my #1 favorite food on the planet. So yes, I was stoked to see this in the box, though somehow the post office cracked the tub and some of the peanut butter was in the box and not in the tub. I think I just about salvaged as much as I could, from the tub not that box eww. I have it in my fridge to be on the safe side too. Delicious peanut butter. Will be using this for a while. If it lasts that long.


These are those adorable salt and pepper shakes I was talking about. The seasoning comes out their butts. Too freaking adorable. Perfect to go next to my hippo salt and pepper shakers. :)


A few final words before I leave you for the day. Happy halloween for one, this is my lion costume for the work contest today. Also Mike and I will be hosting a guest blogger for their reveal of the box we sent him. :) Super excited for our first guest blogger.

Foodie Pen Pal Reveal

Welcome to our first Foodie Pen Pal post. We are Foodie Pen Pals, well, I'm the one that wanted to do it, Mike helped find things and helped put the whole thing together and suggested things for me to put in the box for the person I was sending to. I ask for his input on a lot of things. So here we go. Reveal day!! I have been just itching to write about what was sent to me :) SOOOOO excited!!!

The Lean Green Bean

So first off, I had gone for a nice run Monday September 17 and came back to check my mail. Well as I was digging through my stock pile of mail, due to being out in St. Louis all weekend, I found the oh so sought after key that the mail man leaves when you have a package, unlike UPS who likes to leave me notes and keep my package from me until they can either magically find me at home or I have to go pick up the damn thing. I digress, so I excitedly opened up the special mail box to find my lovely package sitting there, patiently waiting for me. Oh man I was excited. I immediately snapped this picture as I was walking back to my apartment and sent to Mike and exclaimed "IT CAME!!!!"


So then I rushed to the house, so very excited to get this baby inside to crack open and rifle through like a kid on Christmas morning.



I opened it to find a glorious range of foods and goodies that I couldn't wait to dive into. (Yes there is a picture of a snickerdoodle cookie in my kitchen, I used to work in a local Costco Bakery, that was my parting gift). 


I found the card included after examining each item and drooling. I wiped the drool from my face so I could read what was in my card. My dear pen pal asked what I liked and would like included in my box. I had said I was a health nut a little and was training for a 5k mud run and that I loved peanut butter. Caitlin said in her note that she decided to do a peanut theme since I love peanut butter so much. How awesome!!!! And to top it off I love the card because being the Kansas girl I am, I adore sunflowers, they are my favorite. Such happy flowers :)



So now we dive into the box of deliciousness that is peanuts and peanut butter. She included Trader Joe's Salty, Sweet & Nutty Trek Mix. She said this was one of her favorites, it is now mine too! Oh my, the deliciousness that this bag of yumminess is! I almost ate the whole bag in two days. I adore this Trek Mix and still need to get my butt down to TJ's and pick up a package, or two, or ten! Sweet honey roasted peanuts, peanuts, cashews, and peanut brittle!! Mouth orgasm! And then there is the beloved PB & Co. Dark Chocolate Dreams, which I knew was going straight to work to be enjoyed when I needed a healthier alternative to those days I crave chocolate but don't need a chocolate bar. YUM!!! :) Thank you.



Then we have Justin's Classic Peanut Butter. I have only tried the Justin's honey roasted and almond butters. So I again stashed these in my purse to take to work for days I didn't have time to eat or forgot breakfast (like that ever happens) or just needed something to nibble and not have to go raid the vending machine. :) YUMMM Peanut butter - perfect by itself.



Then, yes THEN, I found this. I went a bit crazy happy with this because I've been meaning to try it. I just haven't wanted to spend the money on a jar of it (my local Hyvee charges $6 for the stuff, bit pricey for something that won't last long in my house - PB is usually gone within a few days if not a week). I wasn't sure how I was going to use this though. Should I make a sandwich? Nah, too boring. Should I try adding it to something like cookies? No, I really don't need cookies. Oatmeal? Wasn't in the mood. I know!! I added it to a chocolate banana protein shake one day and made it chocolate peanut butter banana. Oh yum!! This would be a great addition to my protein shakes after my Insanity workouts. Add a little more protein and some delicious flavor. It didn't taste fake at all and satisfied that peanut butter craving that I have about 90% of the time.



Then I found the "Organic High Antioxidant Trail Mix." YUMMMMMM Almonds, pumpkin seeds, goji berries, walnuts, sunflower seeds, dried cranberries, raisins...ooo it goes on. Delish - only thing is I found something delicious that just wasn't familiar to me. Anyone know what this is?


Next we have our bars. MoJo trail mix bars and a Luna bar. We had MoJo Mountain Trail Mix Sweet & Salty and then we had MoJo Peanut Butter Pretzel Sweet & Salty. Oh my yes! The PB MoJo was better in my opinion but both were great for work when I hit that 3pm slump. The PB Cookie Luna bar was fantastic, not covered in sicky sweet coating but enough sweet to combat the salty. Mmmm, definitely a go to if I need a quick bar to eat to supplement a crappy lunch.


As you can see I enjoyed, can you see that pretzel stick right on top there!!! YUMMY Real food :)


Now we have the "Women's Vitality Mix." Can I just say that I absolutely ADORE trail mixes. And these are all fabulous!!!! This had cashews, almonds, dried cranberries, raisins, pistachios, dark chocolate chips (which I ended up picking out and eating while at my desk one day hehe, then I was left with all the really healthy stuff - shhhhh). I thoroughly enjoyed and all trail mixes are gone, done, eaten quickly.
